Sun Dried Tomato Pesto With Chicken And Pasta

Lately our lives have been one adventure after another. Not only have we been dealing with our day to day lives and everything that usually comes with it, but we made a hugely insane (but fantastic) decision to move ourselves out of the Pacific Northwest and back to sunny Southern California!

Seriously.

We made the “decision” to move early in the year, and I say that with quotation marks because we made a decision but I honestly didn’t think it would work out. There have been so many “decisions” that we’ve made over the years but they never panned out. But as I type this blog in warm and sunny California I would say it panned out!

We made it happen, threw all of our belongings into a moving truck and storage container with a hope and a prayer that everything will work out.

It’s been a bit of an adjustment for the both of us since 95% of our belongings are in storage and we are living with a very generous family member. I’m still trying to learn where she keeps everything in the kitchen, and there are so many of my kitchen things I would love to break out but there is either not enough room in the kitchen for my huge amount of kitchen crap, or I can’t find it because its buried in the abyss of the storage unit..

Cranberry Vinaigrette

Holy crap, can you believe this heat? Here in the Pacific North West we are having one of the hottest heat waves in years. I guess this is the other half of the balancing act of the earth since we got snowed in with over two feet of snow this past winter. I just hope this winter is much more mild.

But what do you do when it is so blasted hot outside that you don’t even want to go near your kitchen? Ok, that’s almost a lie. I want to go near my kitchen. I want to be in it and bake cup cakes and get ready for my friends party, I want to bake bread, make soup, make veggie rolls! Alas, in this heat it is not even a sane consideration.

Though there is one thing I love having this time of year: salad. Its nice and cold, easy to prepare in a hot house.

Sweet and Tart – Cranberry Sauce

I love things that are not too sweet and rather tart. It would explain my love of blackberries, raspberries and cranberries. Since I cut out soda and cut back on my sugar intake, I am much more susceptible to the sugar highs and everything tastes sweeter to me.

So when I discovered this I knew I had to start making changes to my diet. Mostly to make things at home that I can cut back the sugar on. One random thing that I’ve been craving is a Cranberry Turkey Sandwich. They sell them on the break trucks that come by my work early in the mornings, which strikes me as weird since I’m trying to copy something off of a roach-coach.

One of the main ingredients to the sandwich I’m trying to make is cranberry sauce, obviously. Unfortunately most of the store bought varieties are VERY sweet. So I decided to make my own!

Hot Fudge Sauce

I have a confession. It’s rather sad but true. I’m really not that big of a chocolate person.

Does that make me less of a woman?

Dark Chocolate Bars

When looking at a dessert or something sweet, I never really went for the chocolate. Sure there was the required Snickers bar in the morning during high school for about a month, or the Peanut Butter Cup that has been warmed in the window on a hot summer day and melted to the point where you have to lick it out of the cup. But beyond that not really a chocolate person.
