Mom’s Meatloaf

My mom was not THE best cook, but she did what she could. There were times where the burned bottom of a roll was “extra flavor”. The one thing I remember from being a kid that my mom made was meatloaf. It was one of the recipes from scratch that always came out good. Whenever we found a good recipe we tended to stick to it, not really just “going with it” and see what happens, mostly because the result could be disastrous.

I called my mom recently and got all of the recipes for food that I remember growing up. It’s something that I wanted to do before I forgot or before the recipes couldn’t be found again. That tends to happen.

There were a few changes I made to the recipe, you know me, I have to do things like that.

Turkey Meatballs

There are many things that I don’t ever really remember eating until I met my husband. It’s not because he had pushed them on me, more along the lines that I had never eaten them growing up. Like mac and cheese, chicken and sour cream enchiladas, banana pancakes… I had never eaten or even thought of trying these things until he was around. Now I make them and LOVE them.

Another thing I never had very often while growing up was meatballs. The only time I ever got them was when we would go to a restaurant in Southern California and they had appetizers in their waiting area of meatballs and hand made potato chips. I also decided to change up the normal recipe and go for something slightly healthier: ground turkey. The one problem with the turkey is that it can get dried out easily, so you have to make sure there is enough moisture in the meatballs to keep a good texture.

Sour Cream Enchiladas

My husband is convinced that I’m really not half Scot and half Mutt. He’s convinced that I’m actually half Mexican and Italian, mostly because those are two of my favorite types of cuisine to cook. I think he would have added some sort of reference to baking, but there isn’t a cultural cuisine that is only baking (not that I know of at least).

I love making Mexican food, but its mostly the Americanized Mexican Bastardization that I’m good at. Burritos, tacos, quesadillas, nachos, enchiladas with red sauce… Anything with chips or in a tortilla is fine with me. But there was one thing I hadn’t made yet for my husband…

First Ever Home Made Pizza!

For the longest time I’ve been wanting to make home made pizza. I’m not talking about grabbing a premade/shaped crust, and adding toppings (pizza dough in a can doesn’t count either).

I’m referencing one of those times where you make the dough yourself, everything is made start to finish (well except cheese, I don’t know how to do that yet).

We made our first pizza a few days ago, and I have to tell you I’m in love.

Marinated Salmon

For dinner Saturday, I decided to do something that I had not done in several years since living with my family.

Whenever we would make salmon, we would let it marinade in Italian salad dressing. We liked to use a really good one, like the one at Olive Garden (you can buy it by the bottle from the restaurant).

We usually would marinate the salmon for a few hours before grilling it. It’s always easiest to just stick it in a zip-top bag and put in just enough dressing to cover the meat on all sides. It always tasted wonderful.

Now that I no longer live near my parents, two states away now, I started just using a little garlic, pepper and dill on my salmon and cooked it in a pan inside. I really am NOT a grill-master.

But Saturday I wanted what I remembered from home. I think everyone does that at some point, comfort food I guess. I bought some dressing and made my yummy food.

It definitely tastes different than just using the spices. The vinegar in the dressing gives it a slightly tangy and sweet flavor all at once. Finishing the meal with some broccoli drizzled in lemon juice and roasted potatoes. YUM!

Banana Pancakes

Banana Pancakes

I don’t know why exactly, but I suddenly got the idea to make pancakes. Not just any pancakes, but banana pancakes! I’ve never had or made banana pancakes but it seemed like a great way to have a sweet pancake without adding a whole lot of sugar to them. The natural sugars from the bananas really come out when you cook them, and you really don’t need syrup.

So off I went into the internet and came upon a very simple recipe for banana pancakes on All Recipes. Lovely. I also had JUST enough flour to make one batch of the pancakes.

I have to say they taste pretty darn good. The texture is SO different from regular pancake. Because of the banana bits it’s rather gooey on the inside, which is not really a bad thing texture wise. I also now have pancakes in the fridge to warm up for breakfast tomorrow!

I want to make them again, but possibly use half whole wheat flour instead of only all-purpose flour. I think that will give them a nice and nutty flavor along with the sweet banana. Not to mention it will give it some extra fiber. I also am thinking of using applesauce instead of the vegetable oil, more fiber and less fat.

This could be one of my favorite sweet breakfasts, paired with some fresh strawberries and powdered sugar.

Italian Grilled Cheese

Italian Grilled Cheese

It’s the breakfast of champions! Well maybe not, but it’s what I had for breakfast this morning after craving it for weeks. What I call the Italian Grilled Cheese, others would probably call a Panini. To me that’s just a super fancy grilled cheese. Call it what it is people, a grilled cheese!

I have started having a love of tomatoes when I was given tomatoes from a friend’s garden. They taste nothing like the tomatoes from the store, but more flavorful and sweeter. It’s sometimes hard now to buy tomatoes from the store, but sometimes you just have to buy them and make your favorite dish.

I first started making these using fresh garden tomatoes, along with some super fresh artisan bread. I first used fresh basil, but found that unless it’s chopped very small, it tends to get pulled out of the sandwich when you bite into it so I ended up using dried basil instead.

I love how the cheese melts, and you get the kick of spice from the basil, garlic and pepper. I know there probably should be a proper recipe for this one, but it’s more of a “soul food” type of dish. A little of this, a pinch of that. I don’t follow a recipe but more of a method and I know what I like. Much of this is just to taste, and I can be very heavy handed on the garlic and basil, but its personal preference.

Banana Bread

banana-bread2Normally, I’m not that big fan of banana bread. Don’t get me wrong, it’s best when warm, with a little butter and the outside has a little bit of crunch.

The husband loves pretty much anything sweet or covered in chocolate, so in the mode of trying to help our waist lines while still enjoying what we’re eating, I found a great recipe for one of his favorites. Banana bread.

One of the things that really stick out to me in this recipe is that it uses apple sauce to keep it moist and not a whole lot of butter. I changed the recipe around a bit from the original, mainly using half whole wheat flour. One of the reasons this is a great trick is it keeps you fuller for longer. Eat two muffins and you feel full and satisfied for hours.

One of the things to note about this recipe is that it definitely does need to rest before going into the oven. Usually the time it takes for the oven to preheat is enough time for the batter to relax a bit before baking. If it doesn’t rest, then it sometimes can have a rubbery outside to it, and not the soft yet crunchy that we all love. Read more »
